Make Your Own Vegetable Tagine

Ingredients:

  • Olive oil (to your heart’s content)
  • 2 onions, diced
  • 2-3 sweet potatoes, cut into cubes
  • 1 butternut squash, cut into cubes
  • 1 can of diced tomatoes
  • 1 can of tomato paste
  •  ½ tsp cayenne pepper
  • 1-2 tsp turmeric
  • 1 tsp cumin
  • 4-5 cardamom pods
  • ½ tsp saffron
  • 1 tsp harissa
  • 1 can chickpeas
  • 3 cups of dried apricots
  • 1 cup pitted dates
  • Handful of parsley/coriander
  • Some vegetable stock or water

Recipe:

  • Heat oil in large pan, throw in onions until yellowed
  • Add in sweet potatoes, butternut squash, diced tomatoes and tomato paste, as well as all spices.
    • Cook for about 40 minutes on low heat, with the lid on.
    • When it starts to look a bit dry, add in the vegetable stock or water
  • Add in the chickpeas, apricots and dates, letting simmer for another 15-20 minutes on low heat, until all the vegetables are soft.
  • Throw in the herbs and you’re good to go!

On the side:

● Naan, pita or garlic bread! 🙂
