Make Your Own Herby Vegan Sauce

Herb Sauce (Green Goddess Dressing)

This herby vegan sauce is a great way to use up any herbs you have on hand! It’s delicious as a salad dressing, on sandwiches, to toss a bowl of chickpeas in, or even as a dip for veggies or chips! It’s versatile and adaptable, meaning you can use up what you have on hand – reducing waste and limiting the need to buy new, packaged items.

Ingredients:

  • 2-3 cups of tender herbs, washed and roughly chopped (any combination of dill, parsley, cilantro, basil, mint, chives, tarragon, etc.!)
  • ½ cup of vegan mayo, vegan greek yogurt, ripe avocado, or any combination of the 3!
  • ½ lemon, zested and juiced
  • 2 tbsp olive oil
  • Salt & pepper

Optional:

  • ½ clove garlic, finely grated
  • Chilli flakes
  • Capers

Toss all ingredients into a blender or food processor and blend until smooth and creamy. Adjust seasoning to taste.
